Buckwheat, cacao and goji berries fudge
I love making healthy treats, I think it is a good option to add more nutrients to your diet and also enjoy a delicious treat with a cup of tea or coffee anytime of the day. If you’re an active person like myself is also a good option to boost your energy after a session.
Buckwheat is naturally gluten free, source of plant protein and fibre. We all know that cacao is not only delicious but super healthy when consume in moderation, it is a great source of magnesium, polyphenols that are naturally occurring antioxidants found in foods like fruits, vegetables, tea, chocolate and wine, and also improve the blood flow in your body. Cacao acts like a mood booster as well, it may improve mood.
Goji berries are a nutritious food originally from the Himalaya. They contain all the essential amino acids and it is the fruit with the highest amount of protein. They are packed with vitamin c, iron, calcium, zinc, selenium and fibre. They contain compounds that make them naturally rich in antioxidants, anti inflammatories and anti bacterial. You will find them dehydrated, you can rehydrate them or consume as they are on your breakfast bowl, salads, toasts or add in treats or bakings like this delicious fudge!
BUCKWHEAT, CACAO AND GOJI BERRIES FUDGE
Plant based, gluten free and refined sugar free
INGREDIENTS
3/4 cup roasted or activated buckwheat kernels.
5 tbsp cacao powder
1/4 cup roasted nuts
1/4 cup roasted sesame seeds
1/4 cup roasted sunflower seeds
1/4 cup goji berries
5 tbsp date caramel (soaked dates then processed)
5 tbsp melted coconut oil
1 tbsp tahini or nut butter
Pinch of sea/pink salt
METHOD
Start by roasting the buckwheat, nuts and seeds in the oven until golden and crunchy, do not over roast.
In a bowl mix de cacao powder, coconut oil, date caramel, tahini or nut butter. and the pinch of salt You will get a creamy chocolate mix.
Once the crunchy mix is ready, let it cool down and then add it to the chocolate mix with the goji berries.
Spread your fudge in a loaf tin with baking paper and place in the freezer for at least 2 hours. Cut and enjoy!
You can leave in the freezer or fridge if desire a smoother consistency.
